Everything about this cake is awesome! These ingredients complement well with each other to make such a delicious treat! You have got to give this recipe a try, I’m telling you! My favorite is the cranberry taste. It is so refreshing and gives a nice touch to each bite. Enjoy!
Ingredients:
1 c dried cranberries
1 Fuji apple, cored, peeled, and cubed
1 c pecans, chopped
2 tsp vanilla extract
2 tsp baking powder
¾ c unsalted butter at room temperature softened
1 c buttermilk
1 ¾ c granulated sugar or cane sugar
3 Eggs
2 ½ c all-purpose flour
powdered sugar for decorating
¼ tsp salt
Directions:
1. Add baking powder, salt, and 2 1/2 cups of flour into a mixing bowl. Whisk until well blended.
2. In another mixing bowl, add sugar and softened butter. Beat until smooth.
3. Add 2 tsp of vanilla extract and 3 eggs into the bowl with the butter-sugar mixture, then beat until well blended.
4. Transfer the flour mixture gradually into the bowl with the butter mixture, then beat every addition until well blended.
5. Add 1/3 cup of buttermilk, then beat until smooth.
6. Add 1/3 of the flour mixture, then beat until well blended. Repeat the process until everything is well mixed.
7. Add the chopped pecans, chopped apple, and dried cranberries, then stir until well incorporated.
8. Apply cooking spray and sprinkle flour on a Bundt cake pan.
9. Transfer the batter to the prepared pan and spread it evenly.
10. Put the pan inside the preheated oven and bake the batter for about an hour or until done.
11. Remove the cake from the oven and allow it to cool for at least 40 minutes.
12. Sprinkle powdered sugar over the cake.
13. Serve and enjoy!
