This is a sweet cake-like bread with delicious layers of apple chunks and walnuts in the center, then topped with a delightful cinnamon streusel. I’m sure you’ll love the sweet apples and cinnamon flavor of this Apple Streusel Bread. I love serving this bread warm with a big scoop of vanilla ice cream for a more decadent dessert.
INGREDIENTS
2 eggs
Butter and flour to prepare a 9×5-inch loaf pan
1 tsp cinnamon
2 apples, peeled, cored, and diced (we used Braeburn)
1 tbsp plus 2/3 c. granulated sugar, divided
1/2 tsp freshly grated nutmeg
1 tsp apple pie spice
1/2 c. walnuts, chopped small
1/4 tsp baking soda
1 1/2 tsp vanilla extract
1 1/2 c. all-purpose flour
1/2 c. butter (8 tbsp)
2 tsp baking powder
1/2 c. sour cream
1/2 c. plus 1 tbsp brown sugar, divided
Glaze:
1 tbsp butter
1/4 c. brown sugar
2 tbsp confectioners’ sugar
2 tbsp heavy cream
How to make Apple Streusel Bread
Step 1: Prepare the oven. Preheat it to 350 degrees F. Grease and flour a 9 x 5-inch loaf pan and set aside.
Step 2: Place ½ cup brown sugar, cinnamon, and nutmeg in a small bowl. Mix well until blended.
Step 3: Place the apples in a medium bowl and toss with 1 tbsp brown sugar, 1 tbsp granulated sugar, apple pie spice, and walnuts. Set aside.
Step 4: Cream the butter in the bowl of a stand mixer with the paddle attachment. Then, add 2/3 cup granulated sugar. Beat for another minute until light and fluffy.
Step 5: While the mixer is still running, add the egg, one at a time. Then, scrape the bowl and beat for another minute on medium speed until the mixture is lightly pale. Beat in the vanilla until blended.
Step 6: Place the baking powder and baking soda in a small bowl. Mix well until combined.
Step 7: Add the flour mixture alternately with the sour cream while the mixer is still running, beating until just incorporated.
Step 8: Into the prepared pan, pour half of the batter, spreading it to the sides. On top, add half of the apple mixture, poking the apples down into the batter. Then, sprinkle half of the sugar mixture on top.
Step 9: Do the same layers with the remaining batter, apples, and sugar mixture. Make sure to pat the apples into the batter before topping them with the remaining sugar mixture.
Step 10: Place the pan on the middle rack of the preheated oven and bake for about 50 to 60 minutes or until a toothpick inserted in the center of the bread comes out clean.
Step 11: In the meantime, prepare the glaze. In a small saucepan, whisk the sugar, butter, and cream. Heat to a boil and let the glaze simmer for about 2 minutes over medium-low heat without stirring.
Step 12: Take the pan off the heat and sift the powdered sugar while stirring. Allow the glaze to sit for at least 10 minutes.
Step 13: Let the bread cool for about 10 minutes on the rack. After 10 minutes, loosen the sides and flip the bread out of the pan and onto the cooling rack. Over a sheet pan, place the rack. Over the bread, drizzle the glaze and allow it to melt into the warm cake.
Step 14: Slice and serve the bread either warm or cooled. Enjoy!
