A delicious pasta dinner with tender chicken pieces, asparagus, tomatoes, and pesto. This Asparagus Chicken Pasta is an easy and quick dinner option perfect for the whole family!
Ingredients
3 tablespoons Olive Oil, divided
1 pound Boneless, Skinless Chicken Breast sliced in half lengthwise
1 pound Asparagus ends trimmed, cut into 2-inch pieces
¼ c. Basil Pesto
3 Garlic Cloves, minced
2 c. Cherry or Grape Tomatoes
12 ounces Dry Whole Grain Fettuccine or linguine
1 teaspoon Kosher Salt, divided
½ teaspoon Freshly Ground Black Pepper, divided
How to make Asparagus Chicken Pasta
Step 1: Following the package directions, cook the pasta in a pot of salted boiling water. Drain when done and set aside 1 c. of the cooking water.
Step 2: In the meantime, season with half the salt and pepper on both sides of the chicken.
Step 3: In a large, deep skillet, heat 2 tbsp olive oil over medium heat. Add the chicken to the shimmering oil (in a single layer) and sear for about 3 minutes on each side until completely cooked.
Step 4: To a cutting board, transfer the chicken. Before slicing it into strips, let the chicken rest for about 5 minutes.
Step 5: In the same skillet, heat the rest of the olive oil. Then, add the asparagus and cherry tomatoes. Next, toss in the garlic. Saute for about 2 to 3 minutes or until the asparagus is tender-crisp, stirring often.
Step 6: To the skillet, add the reserved pasta water along with the sliced chicken. Bring everything to a simmer.
Step 7: Toss in the cooked pasta using tongs as soon as the mixture begins to bubble, evenly coating the pasta.
Step 8: Serve the Asparagus Chicken Pasta right away. Enjoy!
Notes:
For this recipe, you can use your favorite pasta.
If desired, you can substitute asparagus with broccoli or zucchini.
In this recipe, any meat, such as shrimp will work wonderfully.
In a container, place any leftovers and keep them in the fridge for up to 5 days. When ready to eat, reheat in the microwave.
You can also freeze the Asparagus Chicken Pasta for up to 3 months.
