Dinner for two? I happen to have the perfect dish to serve tonight! This spectacular Baked Salmon in Foil with Asparagus and Lemon Garlic Butter Sauce is what you need! It is buttery, fresh, and a lot more! Try this recipe now, and I promise you that you won’t regret it. Enjoy!
Ingredients:
3-4 tbsp butter, diced into small cubes (or ghee)
2 tbsp fresh chopped parsley or cilantro
1 1/2 tbsp fresh lemon juice, or to taste
1 pound (450g) medium-thick asparagus, woody ends trimmed
2 tbsp vegetable broth or chicken broth
4 tsp minced garlic (4 cloves)
2 salmon fillets
Salt and fresh ground black pepper, to taste
1 tbsp of your favorite hot sauce (we used Sriracha)
Directions:
1. Prepare the oven and preheat to 218 degrees C or 425 degrees F.
2. Cut a heavy-duty aluminium foil into two 14×12-inch sheets.
3. Add lemon juice, hot sauce, and broth into a mixing bowl. Stir until well blended.
4. Sprinkle salt and pepper over the salmon fillets, then toss until well coated.
5. Add the salmon fillets onto the prepared foil sheets. Add more seasonings if needed.
6. Add the trimmed asparagus to the side of the fillets.
7. Drizzle a generous amount of garlic butter on top of the fish and veggies.
8. Top each foil packet with pieces of butter. Wrap the salmon fillets but not too tight.
9. Place the packs onto a baking sheet.
10. Place the baking sheet inside the preheated oven and bake the packets for about 9 to 12 minutes.
11. Unwrap the packets, then drizzle lemon juice over them.
12. Sprinkle freshly chopped parsley on top to garnish.
13. Serve with a lemon slice on the side. Enjoy!
