This recipe is super easy to prepare. All you need to do is to toss all the ingredients in a mixing bowl, transfer them into a baking pan, and roast for 20 minutes! That’s it! Ingredients:
3 cloves garlic, chopped
1 tbsp oil
3 tbsp balsamic vinegar
2 lbs. mushrooms
salt and pepper to taste
1/2 tsp thyme, chopped (or 1/4 tsp dried thyme)
2 tbsp soy sauce (or tamari)
Directions:
In a mixing bowl, add soy sauce, salt, thyme, pepper, garlic, balsamic vinegar, oil, and mushrooms. Toss until well incorporated. Make sure that the mushrooms are completely coated.
Transfer the mixture to a large baking pan and spread it evenly.
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place the baking pan in the preheated oven and roast the mushrooms for 20 minutes. Make sure to stir after 10 minutes to cook the other sides.
Remove from the oven and let them rest for a few minutes at room temperature to incorporate all the flavors.

Note:
Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.
