If you are looking for a delicious vegetarian dinner or lunch, these basic broccoli fritters are a must! These are insanely easy to throw together and ready in no more than thirty minutes. Most of all, the kids love them, too!
These broccoli fritters are one of the best ways I enjoy broccoli. I love serving them with a cool dollop of sour cream or yogurt.
2 jumbo eggs
1 pound steamed broccoli florets
½ c. shredded Parmesan cheese
1 garlic clove, minced
4 tablespoons flour
vegetable oil, for frying
salt and pepper, to taste
HOW TO MAKE BASIC BROCCOLI FRITTERS
Step 1: Cook the broccoli florets in a medium-sized pot of salted boiling water for about 5 minutes until fork-tender. When done, drain the broccoli and place them on a cutting board. Into very small pieces, slice the broccoli florets using a large, sharp knife.
Step 2: Place the chopped broccoli, eggs, Parmesan, flour, and garlic in a medium-sized bowl. Mix well. To taste, season with salt and pepper.
Step 3: Into a hot cast iron or non-stick pan over medium heat, add the oil. Swirl to make sure the bottom of the pan is coated. Into the pan, scoop out 2 to 3 tbsp mounds of the broccoli mixture, slightly flattening the mounds using a spatula. Make sure to space the mounds out about 1 inch apart.
Step 4: Cook the fritters for approximately 2 to 3 minutes. Then, flip and continue to cook the other side for another 1 to 2 minutes until cooked through and golden.
Step 5: Serve the broccoli fritters warm with sour cream or yogurt for dipping. Enjoy
You can also bake these fritters. Just follow the recipe and instead of frying, arrange the fritters on a hot, oven-safe skillet and bake for about 10 to 13 minutes at 425 degrees F.
