These golden and crispy cauliflower fritters are my favorite! To make these, all you need are just four basic ingredients. These fritters are excellent to serve as a quick snack or lunch. You can also easily customize the recipe as you see fit. If you are feeling adventurous, you can add onions, kale, Parmesan, fresh herbs, Feta cheese, or even some corn. So good you’ll always get super excited about these cauliflower fritters!

INGREDIENTS
2 eggs
½ c. all-purpose flour
5 c. chopped cauliflower florets
½ teaspoon baking powder
vegetable oil for frying
salt and pepper to taste
How to make Basic Cauliflower Fritters
Step 1: Into a food processor, place the cauliflower and process until finely minced.
Step 2: Into a large mixing bowl, transfer the minced cauliflower. Then, add the remaining ingredients including the vegetable oil. Stir well until you have a paste-like consistency. You can add more flour if the mixture slightly looks a bit too soft and moist.
Step 3: As a measure, use an ice cream scoop. Scoop the mixture and shape about 1/3-inch thick patties. Feel free to form them smaller or larger.
Step 4: In a small amount of vegetable oil over medium heat, fry the patties for about 2 minutes on each side.
Step 5: Serve the cauliflower fritters immediately with sour cream or any of your preferred sauces. Enjoy!
