Ingredients:
2 tbsp olive oil
4 lbs. boneless pork shoulder, cut into 2-inch pieces
For the Dry Rub
1 tsp onion powder
1 tbsp brown sugar
2 tsp garlic powder
1/4 tsp cayenne pepper
2 tsp sea salt
1 tbsp paprika (not smoked)
1 1/2 tsp cumin
1/2 tsp ground black pepper
1 tsp dry mustard
2 tsp chilli powder
For the Sauce
2 tbsp Worcestershire sauce
1/4 c brown sugar
1/2 c chicken broth (I use low sodium)
1 c BBQ sauce (store-bought)
1 c ketchup
Directions:
1. Add all the ingredients for the dry rub into a mixing bowl. Stir until well mixed.
2. In another mixing bowl, add all the ingredients for the sauce and stir until well mixed.
3. Rub each pork with dry ingredients. Make sure to coat each well.
4. Press the “Sauté” button on the Instant Pot.
5. Add oil and allow it to become hot.
6. Add the pork in batches and cook until both sides turn brown. Remove from the pot onto a clean plate.
7. Press the “Cancel” button on the Instant Pot, then add the sauce. Scrape the bottom of the pot to get the brown bits.
8. Put the meat back into the pot and toss until well coated by the delicious sauce.
9. Cover the pot, then press the “Stew” button and cook for about 1 hour and 30 minutes.
10. Do a natural release, then remove the cover.
11. Remove the meat from the pot into a mixing bowl.
12. Press the “Sauté” button again and let the sauce simmer until the texture becomes thick.
13. Use two forks to shred the meat into small pieces.
14. Put the shredded meat back into the pot and toss until well coated by the delicious sauce again.
15. Serve and enjoy!
