An easy and convenient way to enjoy oatmeal – these berry-baked oatmeal bars are a kid-friendly snack. Easily customize these bars to your liking.
Ingredients
1 tsp baking powder
2 c. rolled old-fashioned oats
1 tsp cinnamon
1/2 c. unsweetened almond milk, or your fave milk
1/4 c. maple syrup, or honey
1/2 c. applesauce
2 tbsp ground flaxseed
1/2 tsp sea salt
2 tsp melted coconut oil
1 c. fresh berries + 1/2 c. more for topping, I used blueberries and chopped strawberries
1 tsp vanilla extract
How to make Berry Baked Oatmeal Bars
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: In a large bowl, place all the ingredients except for the berries. Mix well until blended, then gently fold in 1 c of the berries.
Step 3: Evenly spread the batter into an 8 x 8-inch square pan lined with parchment paper and scatter the rest of the berries on top.
Step 4: Place in the preheated oven and bake for about 30 to 35 minutes or until the bars can hold their shape and are completely cooked.
Step 5: Take the pan out of the oven when done and let the bars cool before cutting into six bars. You can keep any leftovers in the fridge for up to a week. You can serve the bars, cold or reheat them in a toaster oven.
Notes:
If needed, use gluten-free oats.
You can use honey in place of maple syrup.
I am a fan of unsweetened vanilla almond milk. But you are welcome to use any milk or whatever you have on hand.
Instead of applesauce, you can also use 1/4 c mashed bananas.
You can swap coconut oil with butter.
You can replace ground flaxseed with 1 egg.
For this recipe, you can use either fresh or frozen berries. You are welcome to use a combination of blueberries and strawberries if desired.
