Ingredients:
2 tbsp apple cider vinegar
1 pack pork tenderloins, trimmed (comes with 2 pieces, 2 – 2 ½ lbs. total)
4 c warm water
1/4 c kosher salt
1 c ice cubes
3 tbsp butter sliced into 6 pads
2 tbsp lemon juice
2 tbsp brown sugar
SPICE MIX:
1/2 tsp smoked paprika
1/4 tsp pepper
1 teaspoon EACH salt, onion powder
1 tablespoon EACH chilli powder, garlic powder
Garnish:
1/2 teaspoon EACH dried parsley, dried basil, dried oregano, dried thyme
Directions:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Line with 2 sheets of foil a large baking sheet.
3. Add water and salt inside a large freezer bag. Shake the bag until well mixed.
4. Add brown sugar, apple cider vinegar, and ice. Shake the bag again until well mixed.
5. Add the pork and let it sit inside the bag for 20 minutes.
6. Remove the pork from the bag, then rinse with water and use paper towels to pat them dry.
7. In a mixing bowl, add all the ingredients for the Spice Mix. Stir until well mixed.
8. Rub the mixture all over the pork. Make sure to coat them well.
9. Place a large skillet on the stove and turn the heat to medium-high.
10. Add 2 tbsp of vegetable oil and allow it to become hot.
11. Add the pork and sear each side for a few minutes until they turn golden brown. Remove from the skillet and move them onto the prepared baking sheet.
12. Sprinkle the rest of the basil, oregano, thyme, and parsley on top. Rub until well coated.
13. Drizzle 2 tbsp of lemon juice over each pork.
14. Top each with butter, then fold the foil to cover.
15. Place them inside the preheated oven and bake for about 15 to 25 minutes or until done.
16. Remove from the oven and open the foil a bit to release the steam from the pork. Let them rest for a few minutes at room temperature.
17. Add more seasonings if needed.
18. Serve and enjoy!
