These are the best homemade Biscoff Cookie, Butter Cake Balls! Takes a little effort to make, but it is all worth it! Super impressive little balls of heaven that will change your game!
Ingredients
Cake:
1 vanilla cake from a boxed cake mix – prepared following the package directions (you are welcome to make your favorite vanilla cake from scratch)
Frosting:
1/2 c. Cookie, Butter
2 tablespoons butter, softened
1/2 c. powdered sugar
1-2 teaspoons milk (if needed to thin the icing)
1/4 teaspoon vanilla
To assemble:
1 tablespoon Cookie, Butter
3-4 Biscoff cookies, crushed
1 package vanilla candy coating (also called almond bark)
How to make Biscoff Cookie, Butter Cake Balls
Cake:
Step 1: Prep the cake and bake following the package directions in a 13 x 9-inch pan. When done, allow the cake to cool fully.
Frosting:
Step 2: Place the butter and cookie butter in the bowl of a stand mixer fitted with a paddle attachment. Blend until smooth, then add the vanilla. Mix again until well blended.
Step 3: To the mixture, add the powdered sugar and mix on low until combined. If the icing is too thick, add the milk until you have reached an icing or chocolate ganache consistency.
To assemble:
Step 4: Using parchment paper or wax, line a baking sheet. Set aside.
Step 5: Shred the cake into crumbs in the pan or a large bowl, using your hands or fork.
Step 6: To the crumbled cake, add about half of the icing and mix well until you have a Play-doh consistency. As needed, add more icing. Keep this in the fridge for at least 30 minutes. This will make it easier to roll the cake mix into balls.
Step 7: Into 1-inch balls, roll the cake mixture using your hands. Then, place the balls on the prepared baking sheet. Allow the cake balls to chill in the freezer for about 30 minutes (optional but recommended to prevent crumbs from getting on the candy barks that cause lumpy coating).
Step 8: In the meantime, microwave half a package of the vanilla candy bark, stirring every 30 seconds until melted.
Step 9: Into the bowl of melted candy, place the cake ball, and coat them using a spoon. Then, lift the coated balls and tap them against the rim of the bowl.
Step 10: Gently push the cake ball back on the lined cookie sheet using a toothpick, making sure to push the cake ball from the bottom.
Step 11: Microwave 1 block of candy coating once the cake ball coating is dry. To the melted candy, stir in a large spoonful of Cookie Butter until well incorporated. Into a plastic bag, spoon the mixture, and snip off one corner. Over the cake balls. About 2 to 3 at a time, drizzle the mixture and sprinkle with the crushed Biscoff Cookies. Allow them to dry completely, then trim the excess candy bark off.
Step 12: To serve, place the Biscoff Cookie Butter Cake Balls in candy cups or mini muffin cups. Enjoy!
