Ingredients:
½ tsp onion powder
¼ c water
¼ c ketchup
½ tsp ground ginger
2 tbsp sesame oil
4 chicken breasts
3 tsp garlic, minced
⅔ c brown sugar
1 tbsp cornstarch + 1 tsp
½ c soy sauce
⅛ to ¼ tsp red pepper flakes optional
¼ c apple juice
½ tsp pepper
Directions:
Slice the chicken breasts into small pieces, then use paper towels to pat them dry.
Add the chicken slices into a mixing bowl. Add 1 tbsp of cornstarch on top, then toss until completely covered.
Place a large skillet on the stove and turn the heat to medium. Add sesame oil and allow it to become hot.
Add the coated chicken into the hot skillet, then cook all sides for a few minutes until they turn golden brown.
Add water, apple juice, ground ginger, soy sauce, minced garlic, 1 tsp cornstarch, pepper, and ketchup into a mixing bowl.
Stir everything until well incorporated.
Add the sauce into the skillet, then scrape the bottom to get the browned bits. Let it boil.
Reduce the heat to low, then simmer the sauce for about 7 minutes while stirring constantly.
Remove the skillet from the heat and let it rest for about 5 minutes or until the texture of the sauce becomes thick.
Serve right away over rice. Enjoy!
Notes:
Make sure to thaw the chicken breasts completely before cooking them.
Feel free to use 1/4 cup of apple juice instead of bourbon. You can also use scotch, brandy, or whiskey instead.
You can use chicken thighs for this recipe if you prefer them over chicken breasts.
