This Broccoli Casserole is a staple side dish. This is ultra easy and ultra cheesy! Make sure to include this on your side dish rotation. This pairs well with just about anything.
I love how easy this recipe is. Not to mention, this is also very versatile. Although the star here is broccoli florets, you are welcome to swap them with cauliflower or green beans. Even use cream of mushroom instead of cream of chicken. You are also welcome to add more cheese if desired! And finish the meal with a buttery taste by topping it off with ritz cracker crunch or bread crumbs.
Ingredients
4 tbsp butter, melted
1/4 c. diced white onion
3-4 crowns of fresh broccoli, cooked and drained – you will need 3-4 crowns (not stalks)
1 can cream of chicken soup
2 eggs
1 c. real mayonnaise
1-1/2 c. shredded sharp cheddar cheese
1 sleeve of Ritz crackers, crushed
1 tsp salt
1/4 tsp pepper
How to make Broccoli Casserole Ultra Easy and Ultra Cheesy
Step 1: Prepare the oven. Preheat it to 350 degrees. Using nonstick cooking spray, grease a 9 x 13-inch baking pan.
Step 2: Into bite-sized pieces, break down the broccoli crowns. Then, steal or boil the broccoli until tender.
Step 3: Into the bottom of the prepared casserole dish, spread the cooked broccoli.
Step 4: Place the melted butter, mayonnaise, cream of chicken soup, and diced white onion in a mixing bowl. Mix well until combined. Add the eggs, 1 c shredded cheese, and season with salt & pepper. Mix again.
Step 5: In the pan over the broccoli, evenly spread the mixture. On top, sprinkle the rest of the shredded cheese, then cover with the crushed Ritz crackers.
Step 6: Place in the preheated oven and bake for about 30 to 40 minutes or until the casserole is heated through.
