Ingredients:
1 c milk
1 can of cheddar cheese soup
4 boneless, skinless chicken breasts
8 oz. frozen chopped broccoli, defrosted
1 1/2 c crushed Ritz crackers
6 oz. cheddar cheese, shredded
1/2 tsp paprika
1/2 tsp salt
1/2 tsp pepper
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Apply cooking spray to a casserole dish.
3. Sprinkle salt and pepper over the chicken, then toss until well coated.
4. Add the chicken breasts to the prepared casserole dish.
5. In a mixing bowl, add cheddar cheese, milk, paprika, and soup. Stir until well blended.
6. Add 1/2 of the cheese mixture on top of the chicken breasts and spread it evenly.
7. Add the broccoli slices on top of the cheese mixture layer.
8. Sprinkle the rest of the cheese and Ritz cracker on top.
9. Place the casserole dish inside the preheated oven and bake for about 45 minutes or until done.
10. Remove the chicken breasts from the oven and allow them to rest for a few minutes at room temperature to incorporate all the flavors.
11. Serve warm and enjoy!
Notes:
You can mix 2 tbsp of melted butter and cracker crumbs for a crunchy topping.
Make sure to slice the chicken breasts, thinly for the best result.
