2 c. cooked white rice
6 c. fresh broccoli, cut into bite-sized pieces
¾ c. onion, diced (about 1 small)
3 tbsp butter
2 c. milk
3 tbsp flour
½ tsp dry mustard powder
2 c. shredded cheddar cheese divided
½ tsp paprika
3 tbsp cream cheese
salt to taste
¼ tsp each garlic & black pepper
How to make Broccoli Rice Casserole from Scratch
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Saute the onion in butter over medium-low heat until translucent and tender. Then, add the flour, garlic powder, and pepper. Stir and cook for another 2 minutes.
Step 3: Slowly pour in the milk, stirring constantly. Keep whisking over medium heat until the mixture has thickened and is bubbly. Then, take off the heat and stir in the dry mustard, paprika, cream cheese, and 1 1/2 c. of the cheddar cheese until melted.
Step 4: In boiling water, cook the broccoli for about 2 minutes until slightly crisp.
Step 5: Combine the rice with broccoli and cheese sauce. Then, transfer the mixture to a greased 2-quart casserole dish. On top, place the rest of the cheese.
Step 6: Place in the preheated oven and bake for about 35 minutes or until bubbly and the cheese is a little browned.
