Ingredients:
⅓ c Yogurt
¾ tsp turmeric powder
1 tsp Kashmiri Chili powder
1 tsp garam masala
1 tbsp ginger- garlic paste or use minced ginger and garlic
1 tbsp ghee or melted butter
1 tsp salt
For the butter chicken sauce
75 grams butter or 5 tablespoons butter
1 tsp Ginger garlic paste or minced ginger and garlic
1 tsp Kashmiri Chili powder or use paprika powder
1 tsp turmeric powder
1 tsp garam masala
½ c raw cashews soaked in warm water for 15- 20 minutes
1 c tomato puree 1 cup = 250 ml
¼ c honey
2 tbsp Kasuri methi (dried fenugreek leaves)
1 tbsp cream
Salt to taste
Directions:
Step 1: In a mixing bowl, add all the ingredients for the chicken marinade.
Step 2: Add the chicken and rub until well coated with the mixture. Cover the bowl with plastic wrap.
Step 3: Place the bowl inside the fridge to chill and marinate for 40 minutes to overnight.
Step 4: Impale each chicken with a skewer.
Step 5: Grill the chicken until done, then set aside.
Step 6: Add the pre-soaked cashews and water into a blender. Pulse until well mixed.
Step 7: Place a pot on the stove and turn the heat to medium.
Step 8: Add butter and allow it to melt.
Step 9: Add the ginger and garlic paste. Sauté until aromatic.
Step 10: Add the red chilli powder and turmeric. Sauté for a few more seconds, then add the tomato puree. Stir until well mixed.
Step 11: Add the marinade, garam masala powder, methi leaves, honey, and cashew paste. Stir until well mixed, then remove from the heat.
Step 12: Transfer everything into a blender and pulse until the texture becomes smooth.
Step 13: Sprinkle salt and allow the mixture to simmer for about 4 minutes.
Step 14: Put the grilled chicken together with 1 tbsp of cream. Stir until well mixed. Simmer for 5 minutes.
Step 15: Serve hot over basmati rice or naan. Enjoy!
