This Cajun Chicken with Bell peppers is an easy and quick weeknight meal you can make in one pan! Juicy and moist chicken breasts that have been seasoned with homemade Cajun spice with tons of paprika. This chicken dinner is one of the best-baked chicken you’ll ever make. Packed with mouthwatering flavors and best of all, this dish is low-carb and gluten-free! To serve this delicious Cajun Chicken and Bell peppers, scoop the bell peppers and serve them on top and around the succulent chicken.
Ingredients
Cajun Seasoning:
¼ tsp cayenne pepper¼ tsp salt
1 tsp paprika
¼ tsp oregano
¼ tsp thyme
Chicken:
4 chicken breasts, small
4 cloves garlic, minced
2 bell peppers, small, thinly sliced (or use mini sweet peppers)
½ c. cheddar cheese, shredded
6 ounces cream cheese, cold, refrigerated, and sliced into 8 slices
How to make Cajun Chicken with Bell Peppers
Step 1: In a small bowl, mix the Cajun seasoning ingredients until well combined.
Step 2: Prepare the oven. Preheat it to 375 degrees F.
Step 3: On the bottom of a casserole dish, place the thinly sliced bell peppers. On top, arrange the chicken breasts, then generously sprinkle with the Cajun seasoning and top with the minced garlic.
Step 4: Over each chicken breast, place 2 slices of cream cheese, then cover with the shredded cheddar cheese.
Step 5: Place in the preheated oven and bake for about 20 to 30 minutes, uncovered, until the chicken is completely cooked. If desired, you can broil the chicken for 2 minutes.
Step 6: Remove from the oven when done. Serve the chicken right away placing the bell peppers on top and around the chicken. Enjoy!
Notes:
Adjust the cooking time depending on the thickness of the chicken breasts.
Keep any leftovers in an airtight container and store them for up to 3 days in the fridge.
