I have never tried anything like this before! Oh, man, I am so glad that I have it a try because I never would have tasted perfection. Try it also now. Enjoy!
Ingredients:
1 tbsp extra-virgin olive oil
4 boneless skinless chicken breast halves (about 1 pound total)
1 tsp Italian seasoning
Salt and pepper
1/2 c balsamic vinegar
1 1/2 tbsp brown sugar
4 cloves garlic (minced)
1 c grape tomatoes (halved)
3 tbsp torn fresh basil (divided)
4 slices of fresh mozzarella
Directions:
Step 1: Place a large skillet on the stove and turn the heat to medium-high.
Step 2: Add olive oil and allow it to become hot.
Step 3: Season with salt, pepper, and Italian seasoning the chicken.
Step 4: Add the chicken into the hot oil and cook each side for 8 minutes or until golden brown.
Step 5: Remove the chicken from the skillet onto a clean plate.
Step 6: Turn the heat down to medium-low.
Step 7: Add the brown sugar and balsamic vinegar. Stir until well mixed.
Step 8: Add the garlic and sauté for about a minute or until aromatic.
Step 9: Add the tomatoes and salt. Simmer for about 7 minutes or until the tomatoes are soft.
Step 10: Add 1/2 of the basil and stir until well mixed.
Step 11: Put the chicken back to the skillet over the tomatoes.
Step 12: Sprinkle a generous amount of mozzarella cheese on top of the chicken.
Step 13: Cover the skillet and allow the cheese to melt completely.
Step 14: Garnish with the rest of the basil.
Step 15: Serve and enjoy!
