Ingredients:
Graham/Oats Crust:
1 c graham cracker crumbs
½ c melted butter
¼ c brown sugar
Cheesecake:
⅛ teaspoon ginger
2 8 ounces package softened cream cheese
¼ c white sugar
¼ c brown sugar
2 tablespoons corn starch
½ teaspoon cinnamon
2 teaspoons vanilla extract
Apple Crisp Topping:
¼ c rolled oats
2 medium to large apples, peeled cored and finely chopped
¼ c all-purpose flour
½ teaspoon cinnamon
¼ c brown sugar
Caramel Topping, if desired
2 tablespoons coconut oil
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Add rolled oats, graham cracker crumbs, brown sugar, and melted butter into a large mixing bowl. Beat until well mixed.
Line with paper liners 16 to 18 muffin cups.
Fill each muffin cup with the batter and press it evenly.
Place them inside the preheated oven and bake for about 5 minutes.
Remove the crusts from the oven and allow them to cool completely at room temperature.
Add cream cheese, ginger, cornstarch, vanilla, white sugar, and brown sugar into the bowl of an electric mixer. Beat until well mixed.
Top each crust with the cream cheese mixture.
In another mixing bowl, add all the ingredients for the streusel. Stir until well mixed.
Scatter the apple slices over the cheesecake.
Place them inside the preheated oven and bake for about 30 minutes.
Remove from the oven and allow them to cool completely at room temperature.
Transfer them inside the fridge to chill overnight.
Top each cheesecake with caramel sauce.
