Ready in just 20 minutes, these Breakfast Quesadillas are loaded with incredible flavors! From the bacon to the cheese, these treats are total comfort food! The best thing about these quesadillas is that they are perfect pretty much any time of the day. Breakfast, lunch, or dinner, one thing is certain they will make you every meal extra special!
Ingredients:
4 soft taco-size flour tortillas
5 large Pete and Gerry’s Organic Eggs, beaten
2 slices bacon
1 1/2 cups shredded cheese (Mexican blend or mozzarella preferred)
1 1/2 tbsp olive oil, divided
1 c baby spinach
1/4 medium red onion, diced
salsa and sour cream, for serving
salt and black pepper, to taste
Directions:
Place a skillet on the stove and turn the heat to medium-high. Add the bacon, then cook for a few minutes until crisp.
Move the crispy bacon to a clean plate lined with paper towels to drain any excess grease. Crumble the bacon.
Add 1/2 tbsp of olive oil into the same skillet and allow it to become hot. Add the onions and sauté for a few minutes until soft. Stir in the spinach until completely wilted. Transfer the veggies to a bowl.
Add olive oil to the same skillet and allow it to become hot. Stir in the eggs until scrambled.
Add shredded cheese to one side of each tortilla, followed by scrambled eggs, onion, spinach, bacon, salt, and pepper. Top everything with more shredded cheese. Fold each.
Place a non-stick skillet on the stove and turn the heat to medium-high. Add the tortillas, then cook each side for a few minutes until the cheese has melted completely.
Place them onto a chopping board, then slice each into two.
Serve with sour cream and salsa. Enjoy!
