The texture of these Easy Peanut Butter Cookies is amazing! They are soft and chewy. I’m sure you are going to enjoy each bite! The flavors complement very well with each other. Ingredients:
1 Egg
¾ c all-purpose flour, sifted or aerated
¼ c creamy peanut butter (can use a natural one too)
2 tbsp granulated sugar for coating
½ tsp pure vanilla extract
½ tsp baking powder
½ c brown sugar
2 tbsp unsalted butter at room temperature (not melted – just let the butter from the refrigerator sit on the counter for about an hour or so)
Directions:
1. Prepare the oven and preheat 175 degrees C or 350 degrees F.
2. Add butter and peanut butter into the bowl of a stand mixer. Beat for a few minutes until well blended.
3. Add brown sugar and beat until well incorporated.
4. Add vanilla and egg, then beat again until well blended.
5. In another mixing bowl, add baking powder and flour. Whisk until well mixed.
6. Transfer the flour mixture into the bowl with the wet ingredients, then beat continuously on a low speed until well incorporated.
7. Line a baking sheet with parchment paper.
8. Add the granulated sugar onto a clean plate.
9. Form small balls out of the dough, then roll each in sugar until well coated.
10. Add the balls onto the prepared baking sheet and arrange them in a single layer. Make sure to leave a 2-inches space between each ball.
11. Place the baking sheet inside the preheated oven and bake the balls for 12 minutes or until done.
12. Remove from the oven and allow the Easy Peanut Butter Cookies to cool completely at room temperature.
