This Cheesy Ground Beef and Cauliflower Rice Casserole is a complete meal that you and your loved ones are going to enjoy! A must-try and a must-have recipe!
Ingredients:
1 package (10 oz) of frozen cauliflower rice, cooked according to the directions on the package
6 oz. fresh baby spinach
½ tsp dried basil
1 tbsp butter
8 oz. shredded Italian blend cheese or any other shredded cheese that you have/prefer
½ tsp sweet paprika
1 lb. lean ground beef
1 small yellow onion, diced
1 tsp Italian Seasoning
1 tbsp olive oil
1 c sour cream
Salt and pepper, to taste
3 cloves garlic, minced
2 to 3 tbsp milk, if needed
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Put a 12-inch skillet on the stove, then turn the heat to medium-high.
3. Add olive oil and allow it to become hot.
4. Add the onions, then sauté for a few minutes until soft.
5. Add garlic and sauté for a minute or until aromatic.
6. Add the ground beef, then cook for a few minutes until crumbly and brown.
7. Add salt, pepper, Italian seasoning, and paprika to season. Stir until well blended.
8. Add the spinach, then cook until wilted completely.
9. Remove the skillet from the heat, then remove any accumulated water.
10. Add dried basil, butter, cooked cauliflower rice, and sour cream into a 9×13-inch baking dish. Stir everything until well blended.
11. Transfer the meat mixture to the baking dish. Stir everything until well incorporated.
12. Sprinkle a generous amount of shredded cheese on top.
13. Place it inside the preheated oven and bake for about 25 minutes or until the cheese has melted completely and turns golden brown.
14. Remove the casserole from the oven and allow it to cool for a few minutes at room temperature.
15. Serve and enjoy!
