This is an amazing casserole filled with fresh spinach, beef, and tons of cheese mixed with cauliflower rice. Super filling, easy to make, and one of the best weeknight dinners that your family deserves!
1 lb lean ground beef
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1 tsp Italian Seasoning
½ tsp sweet paprika
6 oz. fresh baby spinach
1 small yellow onion, diced
1 c. sour cream
1 package (10 oz. ) frozen cauliflower rice, cooked following the directions on the package
½ tsp dried basil
8 oz. shredded Italian blend cheese, or use any other shredded cheese
2 to 3 tbsp milk, if needed
Salt and pepper, to taste
How to make Cheesy Ground Beef and Cauliflower Rice Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: In a large 12-inch skillet, heat the olive oil over medium-high heat. Once hot, add the onions and saute for about 2 minutes. Then, add the garlic, stir, and continue to cook for another 20 seconds.
Step 3: Into the skillet, add the ground beef and season with Italian Seasoning, paprika, salt, and pepper. Continue to cook while breaking the meat up using a wooden spoon until the beef is no longer pink.
Step 4: Next, add the spinach and cook for a minute more, stirring often, until the spinach has wilted.
Step 5: Take the skillet off the heat, then drain the liquid from the skillet. Set aside.
Step 6: Combine the cooked cauliflower rice, sour cream, butter, and dried basil in a 9 x 13-inch baking dish until blended and creamy. You can whisk in some milk if the sour cream and butter are not completely melting.
Step 7: To the baking dish, add the beef mixture and mix well until everything is blended. On top, sprinkle the shredded cheese.
Step 8: Place in the preheated oven and bake for about 22 to 25 minutes or until the casserole is bubbly and the cheese has melted.
Step 9: Take the casserole out of the oven when done and allow it to stand for a few minutes before slicing.
Step 10: Serve and enjoy!
