The perfect comfort food! This cheesy pork chop potato casserole has been my family’s favorite pork chop casserole for years!
INGREDIENTS
4 tbsp Butter
8-9 whole Potatoes, Medium-Sized Cut under 1/4-inch Thick
1 whole Onion, Medium-Sized Cut In Half and Sliced Thin
4 tbsp Extra Virgin Olive Oil
2/3 c. All-Purpose Flour
3 c. Chicken Stock
2 1/2 c. Cheddar Cheese – Grated
2 c. Milk
1/4 c. Chives, Chopped
6 whole Pork Chops
1 c. All-Purpose Flour
Salt and Pepper To Taste
3 tbsp Extra Virgin Olive Oil
1 tsp Granulated Garlic
2 tbsp Butter, Softened
Additional Chives For Garnishing (Optional)
1 tsp Salt
1 tsp Pepper
HOW TO MAKE CHEESY PORK CHOP POTATO CASSEROLE
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: In a bowl of cold water, soak the sliced potatoes to get rid of the extra starch. This will prevent the potatoes from browning.
Step 3: Heat 4 tbsp butter and olive oil in a large saucepan over medium-high heat. Once hot, add the onion and cook until caramelized. On top, sprinkle 2/3 c. of flour and continue to cook until hot and bubbly. Gradually whisk in the chicken stock about half c. at a time followed by the milk. Bring everything to a simmer and cook further until thickened. Next, add the cheese and chives. Stir until melted. To taste, season with salt and pepper. When done, take the pan off the heat.
Step 4: Meanwhile, drain the potatoes well.
Step 5: Evenly layer half of the potatoes in a 10 x 15-inch casserole dish. On top, spread half of the cheese sauce. Add another layer of potatoes and cover with the rest of the cheese sauce.
Step 6: Place in the preheated oven and bake for about 20 minutes.
Step 7: Mix 1 c. of flour with salt, pepper, and granulated garlic until well blended. In the flour mixture, dredge the pork chops.
Step 8: Heat 2 tbsp butter and 3 tbsp extra virgin olive oil in a heavy-duty skillet over medium-high heat. Once hot, add the pork chops and cook until both sides are browned. At this point, the pork chops do not need to be completely cooked. Cook the rest of the pork chops.
Step 9: Over the potatoes, place the browned pork chops.
Step 10: Place in the preheated oven and bake for about 40 minutes, uncovered, until the potatoes are hot, bubbly, and tender.
Step 11: Remove from the oven when done, and let the casserole rest for about 5 to 10 minutes.
Step 12: Over the pork chops, spoon the extra sauce into the pan and garnish with extra chives if desired. Enjoy!
