I have always been a fan of this delicious recipe since I was little. These Cheese Scalloped Potatoes might just be the ones you need today. Give it a try and enjoy!
4 Russet potatoes
1 tablespoon Olive oil
1/2 white onion, diced
3 cloves garlic, minced
2 teaspoon salt
1/2 teaspoon pepper
4 tablespoons butter
4 tablespoons flour
2 1/2 c milk or heavy cream
2 c shredded cheddar cheese
Chives for garnish
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking spray on the bottom of an oven-safe casserole dish.
Step 3: Peel the potatoes and slice them crosswise about 1/8-inch thin.
Step 4: Place them in a large mixing bowl and pour in cold water. Coldwater prevents the potato slices from turning brown.
Step 5: Place a medium saucepan on the stove and turn the heat to medium.
Step 6: Add in oil and allow it to become hot.
Step 7: Add in the garlic and onion, then season with a pinch of nutmeg, salt, and pepper. Cook for 5 to 7 minutes until the onion is translucent and the garlic is aromatic.
Step 8: Add in the butter and allow it to melt.
Step 9: Add in the flour and whisk for about 30 seconds.
Step 10: Moderately add in the heavy cream or milk and stir until well combined.
Step 11: Add in 1 cup of shredded cheese and stir until creamy.
Step 12: Drain the potatoes and pat them dry.
Step 13: Spread a thin layer of cheese sauce on the bottom of a 3-quart casserole dish.
Step 14: Top it with two even layers of potatoes followed by a spoonful of sauce.
Step 15: Repeat this process until all the ingredients are arranged in layers.
Step 16: Top the potatoes with the reserved 1 cup of cheese.’
Step 17: Cover the top with aluminium foil.
Step 18: Place it inside the preheated oven and bake for 1 hour and 15 minutes.
Step 19: Remove the foil 15 minutes before the baking time ends.
Step 20: Remove from the oven and top it with chopped chives.
Step 21: Let the casserole sit at room temperature to cool for at least 30 minutes.
Step 22: Slice, serve, and enjoy!
Make sure to grease your pan with a non-stick cooking spray or softened butter to prevent the dish from sticking.
