Make this delicious cheesy scalloped potatoes from scratch with this easy recipe! This casserole has layers of potatoes and creamy cheese sauce. Serve this as the perfect side dish for any meal.
4 tablespoons butter
1 tablespoon Olive oil
4 Russet potatoes
1/2 white onion, diced
3 cloves garlic, minced
4 tablespoons flour
2 1/2 c. milk or heavy cream
2 c. shredded cheddar cheese
Chives for garnish
2 teaspoons salt
1/2 teaspoon pepper
How to make Cheesy Scalloped Potatoes
Step 1: Prepare the oven. Preheat it to 400 degrees F. Ready an oven-safe casserole dish and grease the bottom.
Step 2: After peeling the potatoes, thinly slice them crosswise into rounds about 1/8th inch thick. In a large bowl, place the potatoes. Add cold water enough to cover the potatoes.
Step 3: Heat the olive oil in a medium-sized saucepan over medium heat. Once hot, add the onion and garlic, then season with salt, pepper, and nutmeg. Saute for about 5 to 7 minutes or until the onions begin to glisten and look wet. Next, add the butter and allow it to melt before adding in the flour. Stir the flour for about 30 seconds.
Step 4: Slowly stir in the milk or heavy cream. I suggest, beginning with about 1/4 c. and slowly adding in the milk/heavy cream until 2 1/2 c. is used up. Make sure to stir constantly to prevent lumps. Then, whisk in 1 c. of the shredded cheese.
Step 5: After draining the potatoes, pat them dry using paper towels.
Step 6: In a 3-quart oven-safe casserole dish or porcelain baker, ladle a thin layer of cheese using a ladle. On top, add 2 even layers of potatoes. Over the potatoes, spoon more sauce. Repeat the same process with the rest of the sauce and potatoes.
Step 7: On top, sprinkle the rest of the 1 c. of cheese. Loosely tent the casserole with foil. Place in the preheated oven and bake for about 1 hour and 15 minutes. Uncover and resume baking for another 15 minutes until the potatoes are very tender and the cheese is bubbling.
Step 8: Remove from the oven when done, and garnish the Cheesy Scalloped Potatoes with some chopped chives. Before slicing, allow this to rest for about 30 minutes, then serve. Enjoy!
Tom prevent the bottom layer from burning or browning, make sure to grease the pan with softened butter or a non-stick spray.
If planning on using cast iron, wipe it down first with a paper towel before greasing the edges and bottom.
