Ingredients:
6 medium Yukon Gold Potatoes
Cheese Sauce
1 1/2 c half and half, or milk
3/4 teaspoon dried rosemary
4 tbsp butter
1 yellow onion, sliced into strings
1/2 c Gruyere cheese, shredded
1 c cooked ham, diced
3 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon sage
2 c cheddar cheese, shredded
¼ c all-purpose flour
1/2 teaspoon dried oregano
Topping/Garnish:
1 tbsp Fresh Parsley, roughly chopped
1/4 c Parmesan, finely grated into a powder
Directions:
For the Cheese Sauce:
Shred the cheddar cheese and Gruyere cheese, then put them into a mixing bowl. Let the shredded cheese sit at room temperature.
Place a saucepan on the stove and turn the heat to medium. Add butter and allow it to melt.
Add the onions, then stir and cook for about 20 minutes or until caramelized.
Add the garlic and sauté for about a minute or until aromatic.
Gradually add the flour, then whisk every addition until well blended.
Place the milk in a heat-proof bowl, then place it in the microwave and heat for about half a minute.
Add the hot milk into the saucepan and stir until well blended.
Add thyme, oregano, sage, and rosemary. Stir and simmer for about 5 minutes. Remove the pan from the heat.
Add the shredded cheese and half of the Gruyere, then stir until well blended. Stir in the ham.
To Assemble:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Peel and slice the potatoes thinly.
Apply cooking spray to a 9×13-inch casserole dish.
Place the potato slices into the prepared casserole dish and arrange them overlappingly. Season with a bit of salt and pepper.
Scatter about 1/3 of the cheese on top of the potatoes. Repeat the process until everything is arranged in layers. Sprinkle the rest of the cheese on top.
Place the casserole in the preheated oven and bake for half an hour.

Notes:
Place any leftovers in an airtight container, then place them in the fridge. They can last up to 4 days or 3 weeks in the freezer.
