1 cup butter
2 cups white sugar
⅔ cup of cocoa powder
4 large eggs
2 teaspoons vanilla extract
1 cup gluten-free all-purpose baking flour
½ teaspoon gluten-free baking powder
¼ teaspoon salt
1 (8 ounces) package cream cheese, softened
⅓ cup white sugar
1 (21 ounces) can cherry pie filling
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9×13-inch baking pan.
Step 3: Place butter in a microwave-safe bowl. Place inside the microwave and heat for 1 minute or until completely melted.
Step 4: Add cocoa powder and sugar. Stir until well mixed. Add the eggs and vanilla extract gradually and beat using an electric mixer every addition.
Step 5: In a small mixing bowl, add baking powder, flour, and salt. Whisk until well mixed and transfer the mixture into the batter.
Step 6: Transfer the batter into the greased baking pan and spread evenly using a spatula.
Step 7: In another mixing bowl, add the egg, sugar, and cream cheese. Beat until creamy. Drop dollops of the mixture and cherries over the batter.
Step 8: Place inside the preheated oven and bake for 35 to 45 minutes or until the edges separate from the sides of the pan.
Step 9: Remove from the oven and let it sit on a wire rack to cool at room temperature.
Step 10: Slice into small bars. Serve and enjoy!
If you do not have gluten-free flour, you can use regular flour instead. Adjust the baking time if needed.
