These chicken Alfredo lasagna roll-ups are a favorite at home. I also love serving this to my guests, and these delicious lasagna roll-ups never disappoint.
To make these roll-ups all you need are just simple ingredients. The noodles are filled with chicken, broccoli, and cheese. Top them with Alfredo sauce and tons of cheese, then bake. You can even prep another batch and freeze it for later.
Ingredients
3 cups cooked, shredded chicken – 2 large chicken breasts
1 box lasagna noodles
1 cup shredded cheddar
1 teaspoon garlic powder
1 cup shredded mozzarella
1 jar Alfredo sauce
1 teaspoon pepper
1/2 cup Parmesan cheese
2 cups finely chopped broccoli – or spinach
How to make Chicken Alfredo Lasagna Roll-ups
Step 1: After cooking the chicken breasts, shred them and set them aside.
Step 2: Cook the lasagna in a large pot until al dente. Drain when done. On a clean towel or paper towel, lay the noodles to drain and cool.
Step 3: Place the chicken, broccoli, cheese, 1/4 c. of the Parmesan, garlic powder, pepper, and 1/2 of the Alfredo sauce in a bowl. Mix well until combined.
Step 4: Grease a large casserole dish. In the bottom, spoon a little of Alfredo sauce, spreading it out.
Step 5: On 1 noodle, spread a few spoonfuls of the chicken mixture. Roll the noodle up and place them into the casserole dish, seam side down. Repeat until you have 9 rolls in the dish. Place the other 9 rolls in a freezer-safe dish.
Step 6: On top of the rolls, spread the rest of the Alfredo sauce and top with Parmesan. Tent using plastic wrap or foil and freeze for up to 3 months.
Step 7: When ready to serve, bake in a preheated 350 degrees oven for about 30 minutes, covered. Uncover and continue baking for another 10 minutes.
