Creamy and delicious! This homemade recipe of chicken and dumplings is seriously easy to make from scratch. The creamy soup is loaded with big fluffy dumplings. This is the perfect dinner when you find yourself craving something comforting on cold nights.
Ingredients
4 cloves garlic, minced
6 tbsp butter
1 c. matchstick carrots
1 c. chopped yellow onion
1 c. diced celery
3 tbsp all-purpose flour
32 ounces (1 quart) chicken stock
12 ounces (1 can) of evaporated milk
4 c. shredded cooked chicken
salt, to taste
1 tbsp fresh thyme (or 1 tsp dried thyme)
2 tsp freshly cracked black pepper (or to taste)
Homemade Dumplings:
1 tbsp plus 1 teaspoon, of baking powder
2 c. all purpose flour
1 tsp freshly cracked black pepper
3/4 c. (6 ounces) whole milk
4 tbsp butter, melted
1 tsp salt
1 tbsp fresh thyme (or 1 tsp dried thyme)
How to make Chicken and Dumplings
Step 1: Melt the butter in a large heavy-bottomed pot (like a dutch oven) on medium-high heat. Once the butter has melted, add the onion, carrots, and celery. Saute for about 5 minutes or until the veggies have wilted. Toss in the garlic and cook for another minute.
Step 2: Stir in the flour and cook for a minute more.
Step 3: Next, pour in the evaporated milk and chicken stock. Stir well. Bring the mixture to a boil before adding in the chicken, thyme, black pepper, and salt. Allow everything to simmer, uncovered.
Step 4: In the meantime, prepare the dumplings. Combine the flour, baking powder, pepper, salt, and thyme. In the middle of the flour mixture, create a well and pour the milk in the middle.
Step 5: Stir using a wooden spoon or rubber spatula until the dough ball forms. Add an extra tbsp of milk if the dough seems too dry.
Step 6: Scoop the dough using a large-sized cookie scoop. Directly drop the dough into the simmering soup, placing them around the pot.
Step 7: Gently press the dumplings down. Cover the pot and decrease the heat. Allow the soup to gently simmer for another 15 minutes, gently stirring occasionally. To make sure the dumplings are cooked, cut one dumpling.
Step 8: When ready, serve the dumplings hot. Enjoy!
Note:
Instead of a large cookie scoop, use a medium-sized cookie scoop. Cook the dumplings and begin to check on them around the 10-minute mark.
