Ingredients:
2 tbsp oil or butter
4 (6 oz) boneless skinless chicken breasts, pounded thin
salt and pepper to taste
8 oz mushrooms, sliced
1 small onion, diced
2 cloves garlic, chopped
1 teaspoon thyme, chopped
1/4 c dry white wine or chicken broth
1/2 c chicken broth
1/2 c heavy/whipping cream
1 tbsp grainy mustard
1 tbsp Dijon mustard
salt and pepper to taste
1/2 c asiago cheese, grated
Directions:
1. Place a skillet on the stove and turn the heat to medium-high.
2. Season with salt and pepper the chicken breasts.
3. Add the seasoned chicken breasts into the skillet and sear each side for about 5 minutes or until they turn golden brown. Remove from the skillet onto a clean plate.
4. In the same skillet, add the onion and mushrooms, then sauté until soft. This will take about 10 minutes.
5. Add the garlic and thyme, then sauté until aromatic.
6. Add wine and scrape the bottom to get the brown bits.
7. Add the cream, broth, grainy mustard, Dijon mustard, salt, and pepper. Stir until well blended.
8. Put the chicken breasts back to the skillet and allow the mixture to boil.
9. Reduce the heat to low and simmer for 5 minutes or until the texture of the sauce becomes thick.
10. Add the asiago and stir until well mixed and melted completely.
11. Serve hot and enjoy!
