Ingredients:
4 skinless, bone-in chicken drumsticks
4 skinless, bone-in chicken thighs
1 teaspoon crushed saffron threads
4 medium yellow onions, cut into 12 wedges each
1 teaspoon ground turmeric
1 1⁄4 c pitted green olives
5 tablespoons olive oil
1 lemon, thinly sliced crosswise, seeds removed
2 teaspoons cumin seeds, crushed
1⁄3 c finely chopped cilantro
1 teaspoon paprika
1 tablespoon kosher salt, plus more to taste
6 cloves garlic, roughly chopped
Cooked white rice, for serving
Freshly ground black pepper, to taste
Directions:
1. Place the garlic onto a chopping board and sprinkle salt. Use the side of the knife to mash the garlic into a paste.
2. Place the garlic paste into a large mixing bowl together with cumin, paprika, and turmeric. Stir until everything is well blended.
3. Add 3 tablespoons of oil and stir until well blended.
4. Add the chicken pieces, then toss until well-coated with the mixture.
5. Wrap the bowl with plastic, then place it in the fridge to marinate the chicken for 4 hours or more.
6. Place a Dutch oven on the stove and turn the heat to medium-high.
7. Add the rest of the oil and allow it to become hot.
8. Add the chicken pieces in batches to the pot, then cook for about 10 minutes or until they turn golden brown on all sides. Transfer them onto a clean plate. Repeat the process with the rest of the chicken.
9. In the same pot, add saffron, onions, salt, and pepper. Sauté for about 15 minutes. Make sure to stir from time to time.
10. Put the chicken pieces back into the pot together with water and lemon slices. Stir everything until well combined. Allow the mixture to boil.
11. Turn the heat down to medium-low, then cover the pot and simmer the mixture for about 40 minutes. Remove from the heat.
12. Sprinkle freshly chopped cilantro and olive over the dish.
13. Serve right away over rice. Enjoy!
