Ingredients:
16 oz. baby Dutch potatoes halved*
Kosher salt and freshly ground black pepper, to taste
2 tbsp chopped fresh parsley leaves
6 bone-in, skin-on chicken thighs
3 c baby spinach, roughly chopped
1 tbsp Italian seasoning
3 tbsp unsalted butter, divided
FOR THE GARLIC PARMESAN CREAM SAUCE:
1 tsp dried thyme
1/4 c unsalted butter
1 c chicken broth, or more, as needed
4 cloves garlic, minced
1/2 c freshly grated Parmesan
1/2 c half and half
2 tbsp all-purpose flour
Kosher salt and freshly ground black pepper, to taste
1/2 tsp dried basil
Directions:
For the Chicken:
1. Prepare the oven and preheat to 200 degrees C or 400 degrees F.
2. Apply cooking spray to a 9×13-inch baking dish.
3. Sprinkle salt, pepper, and Italian seasoning over the chicken. Toss until well coated.
4. Place a skillet on the stove and turn the heat to medium.
5. Add 2 tbsp of butter and allow it to melt.
6. Add the chicken, then sear each side for 3 minutes or until they turn golden brown. Transfer onto a clean plate.
7. In the empty skillet, add 1 tbsp of butter and allow it to melt.
8. Add the spinach, then cook for about 2 minutes or until wilted completely. Transfer onto a clean plate.
For the Garlic Parmesan Cream Sauce:
1. In the same skillet over medium heat, add butter and allow it to melt.
2. Add garlic, then sauté for a minute or until aromatic.
3. Add flour, then whisk and cook for a minute to remove the raw taste.
4. Add the basil, thyme, and chicken broth. Whisk until well blended. Make sure to scrape the bottom of the skillet to get the browned bits.\
5. Add Parmesan cheese and half & half, then stir until well blended. Simmer for about 2 minutes or until the texture of the sauce becomes thick. Add more milk if necessary. Sprinkle salt and pepper to season.
6. Arrange the chicken into the prepared baking dish.
7. Add spinach and potatoes over the chicken.
8. Pour the cream sauce over the potatoes and spread it evenly.
9. Place the baking dish inside the preheated oven and bake for about 25 to 30 minutes or until done.
10. Remove from the oven and sprinkle freshly chopped parsley on top to garnish.
11. Serve and enjoy!
