CHICKEN AND POTATOES WITH GARLIC PARMESAN CREAM SAUCE

Chicken thighs and potatoes smothered in garlic sauce are just too perfect! Give this recipe a try and I am sure that it will not disappoint you at all!

Ingredients:

6 bone-in, skin-on chicken thighs
1 tbsp Italian seasoning
Kosher salt and freshly ground black pepper, to taste
3 tbsp unsalted butter, divided
3 c baby spinach, roughly chopped
16 oz baby Dutch potatoes, halved*
2 tbsp chopped fresh parsley leaves

FOR THE GARLIC PARMESAN CREAM SAUCE

1/4 c unsalted butter
4 cloves garlic, minced
2 tbsp all-purpose flour
1 c chicken broth, or more, as needed
1 tsp dried thyme
1/2 tsp dried basil
1/2 c half and a half*
1/2 c freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste

Directions:

Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Step 2: Apply cooking oil to a 9×13-inch baking dish.

Step 3: Season each chicken thigh with Italian seasoning, salt, and pepper.

Step 4: Place a large skillet on the stove and turn the heat to medium-high.

Step 5: Add tablespoons of butter and allow it to melt.

Step 6: Add the seasoned chicken thighs with skin touching the bottom of the skillet.

Step 7: Sear each side for 2 to 3 minutes or until golden brown.

Step 8: Remove the chicken from the skillet and place them on a clean plate.

Step 9: In the same skillet, add the remaining 1 tablespoon of butter and allow it to melt.

Step 10: Add the spinach and cook for about 2 minutes or until wilted completely. Remove the spinach from the skillet.

Step 11: In the same skillet, add butter and allow it to melt.

Step 12: Add garlic and sauté for 2 minutes or until aromatic.

Step 13: Add the flour and whisk until brown.

Step 14: Add the chicken broth gradually as well as the basil and thyme. Whisk every addition.

Step 15: Add the half&half and Parmesan cheese. Stir and cook for about 2 minutes or until the texture becomes thick.

Step 16: Arrange the chicken onto the greased baking dish.

Step 17: Place potatoes, spinach, and cream sauce over the chicken.

Step 18: Put the baking dish inside the preheated oven and bake for 30 minutes or until done.

Step 19: Serve and enjoy!
