Ingredients:
¼ tsp Salt and Pepper (each for seasoning chicken)
1 tsp Smoked Paprika (for seasoning chicken)
2 tbsp unsalted butter
4 Chicken Breasts (boneless & skinless)
Creamy Paprika Sauce:
1 tbsp flour (sifted)
½ c dry white wine
2 c fresh spinach
4 cloves garlic, minced
1 tbsp butter
½ tsp salt
½ c chicken broth (sodium-free)
1 tsp fresh lemon juice (juice of squeezed, lemon)
½ c heavy cream
1 tsp paprika
Directions:
For the Chicken:
Sprinkle paprika, salt, and pepper over the chicken breasts. Toss until fully coated.
Place a large skillet on the stove and turn the heat to medium-high. Add 2 tbsp of butter and allow it to melt.
Add the chicken breasts into the hot skillet, then cook each side for about 3 minutes or until they turn golden brown.
Remove from the skillet and transfer the chicken breasts onto a clean plate.
For the Creamy Sauce:
In the same skillet, add another tablespoon of butter and allow it to melt.
Add garlic and sauté for a minute or until aromatic.
Add flour, then whisk and cook for a minute or until it turns into a roux.
Add the wine, then scrape the bottom of the skillet to get the browned bits. Stir everything until well blended.
Add chicken broth, lemon juice, and heavy cream. Stir and simmer for 2 minutes. Add salt and paprika to taste.
Stir in the spinach and allow it to wilt for about 2 minutes.
Toss in the chicken breasts until fully coated with the sauce. Cook for additional 5 minutes. Remove from the heat.
Serve right away. Enjoy!
