Ingredients:
4 slices bacon, diced
2 boneless, skinless chicken thighs*, cut into 1-inch chunks
1 tbsp olive oil
1 tablespoon Ranch Seasoning and Salad Dressing Mix, or more, to taste
8 oz rotini
1 c shredded mozzarella cheese
1/2 c shredded cheddar cheese
2 tbsp chopped fresh parsley leaves
FOR THE ALFREDO SAUCE
2 tbsp unsalted butter
3 cloves garlic, minced
1 c heavy cream, or more, to taste
1/4 c freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste
Directions:
1. Prepare the oven and preheat to 190 degrees C or 375 degrees F.
2. Apply cooking spray in a 9×9-inch baking dish.
3. Place a saucepan on the stove and turn the heat to medium.
4. Add butter and allow it to melt.
5. Add garlic and sauté until aromatic.
6. Add the heavy cream gradually and whisk every addition.
7. Add the Parmesan cheese and stir until well mixed and thick. Season with salt and pepper, then remove from the heat.
8. Place a large skillet on the stove and turn the heat to medium-high.
9. Add the bacon and cook until brown. Discard any excess grease and leave about 1 tbsp.
10. Place the bacon slices onto a plate lined with paper towels to drain fat.
11. Place the chicken thighs inside a resealable bag together with Ranch dressing and 1 tbsp of olive oil. Shake the bag until the chicken thighs are well coated.
12. In the same skillet, add the coated chicken thighs and cook each side for 3 minutes or until they turn brown. Remove from the heat.
13. Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
14. Add the pasta and cook until al dente. Rinse with cold water to stop the cooking process.
15. Transfer the pasta into the prepared baking dish and spread it evenly on the bottom.
16. Top the pasta with chicken thighs and alfredo sauce.
17. Sprinkle the cheeses and crispy bacon on top.
18. Put it inside the preheated oven and bake for 20 minutes or until done.
19. Remove from the oven and sprinkle parsley on top.
20. Serve hot and enjoy!
