This casserole is pure comfort food! It’s super cheesy, creamy, and packed with ranch chicken, bacon, and homemade Alfredo sauce. Bonus, you can easily make this casserole in advance!
INGREDIENTS
2 boneless, skinless chicken thighs, cut into 1-inch chunks
4 slices bacon, diced
1 tbsp Ranch Seasoning and Salad Dressing Mix, or more, to taste
1 tbsp olive oil
8 oz. rotini
2 tbsp chopped fresh parsley leaves
1 c. shredded mozzarella cheese
½ c. shredded cheddar cheese
ALFREDO SAUCE:
3 cloves garlic, minced
2 tbsp unsalted butter
¼ c. freshly grated Parmesan
Kosher salt and freshly ground black pepper, to taste
1 c. heavy cream, or more, to taste
HOW TO MAKE CHICKEN BACON RANCH CASSEROLE
Step 1: Prepare the oven. Preheat it to 375 degrees F. Using a nonstick spray, lightly grease a 9 x 9-inch baking dish. Or lightly coat with oil.
Step 2: In a saucepan, melt the butter over medium heat. Once melted, add the garlic and cook for about 1 to 2 minutes, stirring often until aromatic. Then, slowly stir in the heavy cream. Continue to cook for another 1 to 2 minutes while stirring constantly until blended. Add the Parmesan and cook for 1 to 2 minutes more until a little thickened, stirring constantly. You can add extra heavy cream if the mixture is too thick. To taste, season with salt and pepper. Keep the Alfredo sauce aside.
Step 3: Into a hot large skillet on medium-high heat, add the bacon. Cook for about 6 to 8 minutes until the bacon is crispy and brown. Drain the fat, reserving 1 tbsp in the skillet. To a paper towel-lined plate, transfer the bacon.
Step 4: Place the chicken, 1 tbsp olive oil, and Ranch Seasoning in a gallon-sized Ziploc bag. Seal the bag and shake well to coat the chicken.
Step 5: To the skillet, add the chicken and cook for about 2 to 3 minutes per side, flipping once until completely cooked. Set aside when done.
Step 6: Following the package directions, cook the pasta in a large pot of boiling salted water until al dente. Drain when done.
Step 7: To the prepared baking dish, add the pasta. On top, make a layer of chicken and Alfredo sauce. On top, sprinkle the cheese/s and bacon.
Step 8: Bake the casserole in the preheated oven for about 15 to 20 minutes or until bubbly and heated through.
Step 9: Remove from the oven when done and serve the casserole right away. If desired, garnish with some parsley. Enjoy!
NOTE:
In this recipe, you can also use boneless, skinless chicken breasts.
