This casserole is something you will crave constantly! It has chicken, rice, veggies, and delicious seasonings that you will surely love! Get a bite and you’ll know what I mean. Enjoy!
Ingredients:
2 c shredded cheddar cheese, separated
2 tbsp butter
½ c milk
1 1/4 c white long-grain rice, uncooked
2 boneless, skinless chicken breasts or 2 c diced rotisserie chicken
2 1/2 c chicken broth
10.5 ounces of Condensed Cream of Chicken Soup
1 tbsp olive oil
2 c fresh broccoli florets, uncooked
Salt/Pepper, to taste
½ c sour cream
1 tsp Italian Seasoning
Optional Seasonings:
1/2 tsp garlic powder
1 tsp dried thyme
Casserole Topping:
2 tbsp melted butter
1 c Ritz crackers, crushed
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Cut the chicken into small pieces, then season them with salt, pepper, and Italian seasoning. Toss until well coated.
Place a large pot on the stove and turn the heat to medium. Add butter and allow it to melt.
Add the chicken slices into the pot, then cook for about 5 minutes or until golden brown. Remove the chicken breasts from the pot and place them onto a clean plate.
In the same pot, add rice, chicken broth, and olive oil. Stir everything until well incorporated. Allow the mixture to boil.
Turn the heat down to low, then simmer for 7 minutes.
Add the broccoli on top of the rice, then cover and cook for 8 more minutes. Turn off the heat and let the rice and broccoli rest for 10 minutes with the lid on.
Apply cooking spray to a 9×13-inch casserole dish.
Stir in the soup, cooked chicken, 1/2 cheddar cheese, sour cream, and seasonings to the pot. Transfer everything into the prepared casserole dish and spread it evenly.
Place the casserole in the preheated oven and bake for about 15 minutes.
Put the crumbled crackers and melted butter into a mixing bowl. Stir until well incorporated. Pour the mixture over the casserole and spread it evenly. Bake for 10 more minutes.
Remove the casserole from the oven and allow it to cool for at least 5 minutes to incorporate all the flavors.
