What an amazing day it is to cook such a delicious meal! For lunch, I made this awesome Chicken Casserole and my kids couldn’t get enough of it! You will also have less guilt eating this because I used chicken breasts so not a lot of fat! This is also perfect for kids because it has broccoli in it. I serve it with steamed rice. Give this one a try and I am sure that you’re gonna love it!
INGREDIENTS
4 boneless skinless chicken breasts
1 cup chicken broth
2 cloves garlic2 wedges of onion
4 cups seasoned stuffing mix
1 cube butter (1/2 cup)
1 can Cream of Chicken soup
1-pint sour cream
8 oz frozen broccoli cuts. thawed
HOW TO MAKE CHICKEN CASSEROLE
Step 1: Place a skillet on the stove and turn the heat to medium-high.
Step 2: Add in the broth, chicken breasts, onion, and garlic then allow it to boil.
Step 3: Reduce the heat to medium then cover the skillet. Simmer for 15 to 20 minutes or until the color of the chicken is no longer pink.
Step 4: Remove the cooked chicken breasts and use a fork to shred them. Set aside as well as the broth.
Step 5: Add in into skillet and allow it to melt.
Step 6: Transfer the mixture into a medium mixing bowl then whisk use a fork to mix.
Step 7: In a 9 x 13-inch pan or a large casserole dish, add in half of the butter mixture then spread it evenly.
Step 8: Add in the reserved broth into a mixing bowl. Add the soup and sour cream. Whisk until well-mixed.
Step 9: Add in the shredded chicken on top fo the butter mixture layer.
Step 10: Add in the soup and broth mixture on top of the chicken and spread it completely.
Step 11: Top with the rest of the mixture.
Step 12: Place inside the preheated oven and bake at 350 degrees for 30 minutes.
Step 13: Remove from the oven and let sit on a wire rack to cool for 2 to 3 minutes.
Step 14: Serve and enjoy!
