My husband’s favorites! This chicken cordon bleu casserole has layers of chicken, ham, and Swiss cheese in a delicious, creamy Dijon sauce. A healthy version of our favorite cordon bleu that you can easily make at home using just a couple of readily available ingredients. For best results, the chicken must be nice and juicy.
This chicken cordon bleu casserole is delightful and very rich. This casserole pairs perfectly with any light side dishes. I prefer to serve this casserole with green salad, roasted asparagus, oven-roasted green beans, or steamed cauliflower.
Ingredients
6 ounces of ham cut into bite-size pieces
6 c. shredded cooked chicken (from about 2 pounds of chicken)
4 ounces butter, melted
1 tbsp Dijon mustard
6 ounces of cream cheese, softened
1-ounce lemon juice
5 ounces of Swiss cheese
½ tsp salt
1 tbsp white wine (optional)
How to make Low Carb Chicken Cordon Bleu Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees. In the bottom of a 9 x 13-inch baking dish, place the chicken and top with the ham pieces.
Step 2: Place the melted butter, softened cream cheese, white wine (if using), mustard, lemon juice, and salt in a large bowl with an electric mixer. Beat until you have a thick sauce. Over the chicken and ham, spread the sauce.
Step 3: On top, place the Swiss cheese slices.
Step 4: Place in the preheated oven and bake for about 30 to 40 minutes or until the casserole is hot.
Step 5: For a more golden and bubbly cheese, broil the casserole in the last 2 minutes of baking.
Notes:
If desired, you can add a splash of dry white wine for a nice flavor.
Feel free to double the amount of sauce or add 1/4 c of chicken broth if the shredded chicken is on the dry side. Mix before adding the toppings.
For this recipe, you can use chicken tenderloins in place of shredded chicken. Cook and drain the cooking liquid, then proceed with the recipe.
