This chicken Fajita casserole is an easy and scrumptious Mexican dinner that’s packed with all our favorite fajita flavors! It’s super cheesy and mouthwatering. Top each serving with sour cream and slices of avocado for an enticing weeknight meal that your family will love!
This casserole is not only a great one-pan meal, but it’s also freezer friendly. You can keep this in the freezer for up to 3 months. Thaw before reheating. Leftovers also make a filling lunch the next day.
INGREDIENTS
6 (4 to 6 oz. each) boneless, skinless chicken thighs or breasts (cut into bite-sized pieces)
1 tbsp olive oil
1 small onion (sliced)
1 recipe or package of fajita seasoning mix
1 c. sour cream
4 bell peppers, sliced – (use different colors if desired)
2 c. cheddar cheese, grated
4 oz. cream cheese, softened
optional for serving: avocado, guacamole, sour cream, and salsa
How to make Chicken Fajita Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Heat the olive oil in a skillet over medium and saute the chicken until done. Set the chicken aside when done.
Step 3: In the now-empty skillet, add the onions and peppers. Saute until softened.
Step 4: Return the chicken to the skillet, then add the taco seasoning, sour cream, and cream cheese. Stir well.
Step 5: On top, sprinkle the cheese.
Step 6: Place in the preheated oven and bake for about 20 minutes or until the cheese has melted and is bubbly.
NOTES:
To save time, use pre-cooked chicken (about 5 to 6 c.).
In this recipe, use 1 recipe of healthy homemade Taco Seasoning Mix, Fajita Seasoning Mix, or 1 store-bought packet.
Serve the casserole topped with avocado, guacamole, sour cream, or salsa.
You can just transfer everything to a greased casserole dish if you do not have an oven-proof skillet.
