Who’s up for easy, quick, and delicious tonight? Hands and feet up! These Chicken Lasagna Roll-Ups check everything on the list. And you know what’s best? The sauce! Come on now, dig in!
Ingredients
4 chicken breasts cooked and shredded or 1 rotisserie chicken (I prefer rotisserie chicken because of its flavour)
1 teaspoon salt
4 tablespoons butter
1/4 c. onion minced
1/4 c. bell pepper minced red, yellow, or orange. the sweeter variety
1 garlic clove, minced
1 Roma tomato diced small
5 tablespoons flour
4 c. broth
1/4-1/2 c. heavy cream
3 c. mozzarella cheese
12 cooked lasagna noodles
How to make Chicken Lasagna Roll-ups
Step 1: Add the butter, onion, bell pepper, garlic, and tomato to a skillet. Saute until softened over medium-low heat. Adjust the heat to medium-high, then add in the flour. Cook for a couple of minutes more. Now, gradually whisk in 4 cups of broth.
Step 2: Bring the sauce to a simmer. Once the sauce has thickened, turn the heat off, then add in 1/4 cup of cream. If you like it more creamy, add in up to half a cup of cream.
Step 3: Into the bottom of a 9 x 13-inch pan, spread about half a cup of the sauce. Then, mix the shredded chicken with 2 cups, more or less, mozzarella cheese.
Step 4: Lay the lasagna noodles out, then spread over the cheese and shredded chicken. Roll it up, then place it in the prepared pan. Pour the sauce on top and add extra cheese if desired.
Step 5: Place inside a preheated 350 degrees oven and bake for about 30 minutes until hot and bubbly.
Notes:
Do a test taste because there is a variety of broth that has more seasonings and salt. Remember that bullion and rotisserie chicken is salty. And if you intend to use plain boiled chicken and low-sodium broth, add more salt/seasonings for flavour.
