This casserole is a simple dinner made with chicken, basmati rice, carrots, and onion. A delicious, elegant weeknight meal that you can easily and quickly make at any time! A complete meal that you can serve by itself or with garden or Greek salads. This chicken rice casserole is also perfect to pair with some steamed broccoli or asparagus. Homemade coleslaw is another excellent side to serve to this tasty casserole. Keep any leftovers in the fridge for up to 4 days or freeze them. If freezing, tightly covers the casserole with a lid or foil. Before serving, reheat in the oven for about 15 minutes at 350 degrees F.
INGREDIENTS
3 tablespoons Olive oil
1 c. Basmati rice
1 medium Onion, diced
1 pound Boneless, skinless chicken thighs
2 medium Carrots, shredded
1 teaspoon of Favorite Chicken Seasoning (to taste)
2 c. Chicken broth
¼ teaspoon turmeric, optional (for color)
1 teaspoon Salt and pepper, to taste (to taste)
How to make Chicken Rice Casserole
Step 1: Prepare the oven. Preheat it to 450 degrees F.
Step 2: Heat the olive oil in a large skillet over medium-high heat. Then, add the chopped onion and saute for about 3 minutes. Next, add the carrot and continue to cook for additional 3 minutes.
Step 3: Into the skillet, add the chicken and season with salt, pepper, and your preferred chicken seasoning such as Mrs. Dash Original Seasoning, Taco Seasoning, Old Bay Seasoning, etc. Cook for an additional 5 to 7 minutes.
Step 4: Into a medium casserole dish, transfer the chicken mixture. Then, add the rice and pour over the chicken broth. Mix well.
Step 5: Tent the casserole using foil and place it in the preheated oven. Bake for about 40 minutes until cooked through.
NOTES:
Some of my favorite chicken seasonings are Mrs. Dash Original Seasoning, Taco Seasoning, and Old Bay Seasoning.
You are welcome to add more or less salt depending on how salty you like your chicken.
For that beautiful yellow color, ad 1/4 tsp turmeric.
