Ingredients:
Chicken thighs
1 tbsp vegetable oil
4 chicken thighs, skin-on, bone-in
1 tsp Italian seasoning dried thyme, oregano
salt and pepper
Mushroom sauce
5 slices bacon cooked, chopped
⅛ tsp salt
6 ounces white mushrooms
5 sprigs of fresh thyme
1 c heavy cream
⅛ tsp salt
Directions:
1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.
2. Sprinkle Italian herb seasoning, salt, and pepper all over the chicken thighs, then rub each until well coated.
3. Place a large skillet on the stove and turn the heat to medium-high.
4. add vegetable oil and allow it to become hot.
5. Add the chicken thighs with the skin side facing down. Sear each side for 5 minutes or until brown.
6. Line with aluminium foil on a baking sheet.
7. Arrange the seared chicken thighs onto the prepared baking sheet. Make sure to leave a small space between each chicken.
8. Place the baking sheet inside the preheated oven and bake for 20 minutes or until done.
9. Remove from the oven and keep them warm.
For the Mushroom Sauce:
1. Place the same skillet on the stove and turn the heat to medium.
2. Add a bit of vegetable oil and allow it to become hot.
3. Add the mushroom slice and sauté until soft.
4. Add the bacon, heavy cream, fresh thyme, and salt. Stir until well mixed and allow the mixture to boil.
5. Turn the heat down to low and simmer for 2 minutes. Add more salt if necessary.
6. Transfer the chicken thighs into the skillet with the delicious sauce, then toss until well coated.
7. Serve and enjoy!
