Ingredients:
4 large pieces of cod, catfish, or any firm white fish works. choose for a thick fish.
1 cup all-purpose flour
salt and pepper
vegetable oil for frying
1 cup all-purpose flour
1 1/2 teaspoons baking powder
7 tablespoons milk
1/2 tablespoon of olive oil
1 tablespoon water, ice cold
A pinch of salt
6 tablespoons beer (choose a light, fizzy beer)
Directions:
1. Prepare the oven and preheat to 300 degrees F.
2. Place a pan on the stove and turn the heat to medium.
3. Add oil and allow it to become hot.
4. Use paper towels to pat dry the fish.
5. In a mixing bowl, add flour, salt, and pepper. Whisk until well mixed.
6. Add the fish into the flour mixture and toss until well coated. Shake off any excess.
7. In another mixing bowl, add all the ingredients aside from the beer. Stir everything until well combined.
8. Slice the peeled potatoes into thin cuts. Use paper towels to pat them dry.
9. Add the potato chips into the hot oil and cook for about 8 minutes or until they turn golden brown.
10. Remove the chips from the oil onto a clean plate lined with paper towels to drain any excess oil.
11. Add the beer into the bowl with the batter, then stir until well mixed.
12. Turn the heat up to medium-high.
13. Add the fish into the batter and coat well.
14. Add the fish into the hot oil and cook for 5 minutes or until golden brown.
15. Remove the fish from the oil onto a clean plate lined with paper towels to drain any excess oil.
16. Put the potato chips back to the hot oil and cook for another 3 minutes.
17. Serve the potato chips with the fish. Enjoy!
