This incredible recipe was given to me by my dear, friend, Louise. I am so glad that I gave it a try because I never would have tasted perfection! Feel free to add more ingredients if you prefer. I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go! These heavenly treats are best served for breakfast but it works for me any time of the day. Have the best day, everyone, and I hope you are all well. Enjoy!
Ingredients:
4 large russet potatoes
1 medium onion
2 Eggs
1/4 c of all-purpose flour
salt and pepper to taste
vegetable oil for frying
Directions:
Step 1: Add the peeled and sliced onions and potatoes into a food processor. Pulse until processed completely.
Step 2: Transfer the mixture onto a paper towel. Fold the towel and squeeze until most of the water is gone.
Step 3: Place the mixture into a mixing bowl.
Step 4: Add flour, eggs, salt, and pepper into the bowl with the potato-onion mixture. Beat until well combined.
Step 5: Place a nonstick skillet on the stove and turn the heat to medium.
Step 6: Add vegetable oil and allow it to become hot.
Step 7: Spoon some of the potato-onion mixtures and spread them evenly to make patties.
Step 8: Fry each side for 2 minutes or until done.
Step 9: Place the pancakes onto a plate lined with paper towels to drain any excess oil.
Step 10: Serve warm and enjoy!
