This Coconut Cake is something you will crave pretty much all the time! The moist texture and the rice frosting are very addicting! Make sure to invite everyone because this cake can serve up to 16 people. Try this recipe now!
Ingredients:
FOR THE CAKE:
1 tablespoon baking powder
1 ¾ c granulated sugar
1 teaspoon vanilla extract
1 c shredded, sweetened coconut
5 Egg whites, room temperature
2 ½ c cake flour
½ teaspoon kosher salt
¾ c buttermilk
½ teaspoon almond extract
¾ c unsalted butter, softened to room temperature
FOR THE FROSTING:
¼ c heavy cream
2 c shredded, sweetened coconut
½ c unsalted butter, softened
5 c powdered sugar
1 package (8 oz) cream cheese, softened to room temperature
Directions:
To Make the Cake:
Apply cooking spray to two 9-inch cake pans.
In a mixing bowl, add 1/4 cup of buttermilk and egg whites. Beat a few times until well incorporated.
In another separate mixing bowl, add sugar, vanilla extract, almond extract, and butter. Beat everything until well blended.
Beat in all the dry ingredients. Add the egg white mixture, then beat again until well combined.
Stir in the rest of the milk and coconut.
Transfer the batter to the prepared cake pans and spread it evenly.
Place the pans in the preheated oven and bake the cakes for about 26 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove the cakes from the oven and allow them to cool while you prepare the frosting.
To Make the Frosting:
In the bowl of the stand mixer, add cream cheese and butter. Beat for about 3 minutes or until well incorporated.
Add the heavy cream and powdered sugar, then beat again until well blended.
To Assemble the Cake:
Add a cake over the cake stand, the top it with half of the frosting. Use a spatula to spread the frosting.
Add the 2nd cake over, then spread the rest of the frosting on top.
Top with the coconut. Enjoy!
Notes:
Place any leftovers in an airtight container, then put them in the fridge.
