These Coconut Toffee Chocolate Chip Cookie Bars are simply irresistible! If you are having guests over, then you have got to give this recipe a try! These delicious cookies will be gone in just a few minutes, I’m telling you!
Ingredients:
CRUST:
1 c butter, softened
1 Egg, lightly beaten
12 ounces of semi-sweet chocolate chips
3/4 c brown sugar
1/2 teaspoon salt
1 c old-fashioned oats
1 1/4 c all-purpose flour
2 c flaked coconut
FILLING:
8 ounces of toffee bits
1/4 c Karo® Light Corn Syrup
14 ounces sweetened condensed milk
Directions:
For the Crust:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to a 13×9-inch baking dish.
In a mixing bowl, add brown sugar, flour, coconut, and oats. Beat for a few minutes until well incorporated.
Add butter and beat until it forms into a dough.
Add egg, then beat until well incorporated.
Add the chocolate chips, then stir just until combined. Set aside about 1 1/2 cups of the mixture for later use.
Transfer the rest of the mixture into the prepared baking dish and spread it evenly.
Place the batter in the preheated oven and bake for about 10 minutes.
For the Filling:
In a mixing bowl, add corn syrup and sweetened condensed milk. Stir until well blended.
Spread the mixture on top of the crust, then sprinkle the toffee bits over it.
Add the reserved crust over the toffee bits and spread it evenly. Make sure to cover the entire top.
Place it in the oven and bake for about 25 to 30 minutes or until the top turns golden brown.
Remove from the oven and allow it to completely cool at room temperature. Slice into even pieces.
Serve and enjoy!
