Ingredients:
6 ounces pepperoni sausage, diced
1 red onion, thinly sliced
1 (8 ounces) package uncooked tri-colour rotini pasta
6 ounces provolone cheese, cubed
¾ c chopped red bell pepper
1 (6 ounces) can pit black olives
1 small cucumber, thinly sliced
¾ c chopped green bell pepper
½ c olive oil
¼ c red wine vinegar
2 cloves garlic, minced
¼ c minced fresh parsley
¼ c grated Parmesan cheese
¼ tsp salt
⅛ tsp ground black pepper
½ tsp ground mustard seed
1 tsp dried basil
1 tsp dried oregano
Directions:
1. Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
2. Add the rotini pasta and cook for a few minutes until firm to bite. Drain and use cold water to rinse the pasta. This will stop the cooking process.
3. Add the drained pasta, provolone cheese, pepperoni, parsley, olives, Parmesan cheese, cucumber, red pepper flakes, and green bell pepper flakes into a large mixing bowl. Stir until well combined.
4. Add vinegar, olive oil, salt, pepper, ground mustard, garlic, oregano, and basil into a jar with a lid. Close the jar and shake it until well blended.
5. Empty the jar on top of the pasta salad, then toss everything until well combined.
6. Cover the bowl with plastic wrap, then place it inside the fridge to chill for at least 8 hours.
7. Serve cold and enjoy!
