Enjoy this delicious Longhorn Parmesan Crusted Chicken in the comfort of your home! The perfect dinner is just about an hour away from tasting! I recommend marinating the chicken overnight for the best result. Enjoy!
Ingredients:
3 tbsp vegetable oil
Salt/Pepper, to taste
4 skinless/boneless chicken breasts
Marinade (Shortcut- Use Italian Salad Dressing):
1 tsp distilled white vinegar
1/3 c olive oil
1 tsp lemon juice
1/2 tsp pepper
1 tbsp minced garlic
2 tbsp Worcestershire sauce
1/3 c ranch dressing
Parmesan Crust:
3/4 c panko breadcrumbs
1/2 c Provolone cheese, chopped into bits
4 tbsp melted butter
6 tbsp Buttermilk Ranch salad dressing, regular Ranch is fine as well
1/2 c Parmesan cheese, chopped into bits
2 tsp garlic powder
Directions:
In a mixing bowl, add all the ingredients for the marinade. Stir everything until well incorporated.
In a large freezer bag, add the chicken. Seal the bag and gently pound each chicken with a meat mallet to about ½ inch thick.
Remove the chicken from the bag, then season them with a bit of salt and pepper.
Put the chicken into another freezer bag together with the marinade. Seal the bag and shake it until the chicken breasts are well coated. Place the bag in the fridge and marinate the chicken for about 30 minutes or overnight.
Place a skillet on the stove and turn the heat to medium-high. Add 3 tbsp of vegetable oil and allow it to become hot.
Put the chicken into the hot skillet, then sear each side for about 5 minutes or until brown.
Transfer the seared chicken onto a baking sheet.
Cover the baking sheet with aluminum foil.
For the Parmesan Crust:
Prepare the oven and preheat to 450 degrees F low broil.
In a heat-proof mixing bowl, add Parmesan cheese, Provolone cheese, and Ranch dressing. Whisk everything until well incorporated.
Place the bowl in the microwave, then heat the mixture for a few 15 seconds. Remove and stir every 15 seconds until melted completely.
Pour the mixture over the seared chicken on the baking sheet and spread it evenly.
Place the baking sheet in the preheated oven and broil for about 3 minutes or until the cheese has melted.
In a mixing bowl, add panko bread crumbs, garlic powder, and melted butter. Stir until well blended.
Pour the mixture over the chicken and spread it evenly. Broil for about a minute. Remove from the oven.
Serve and enjoy!
